Tips & Variations for Baking Yogurt Plum Cake

Use juicy, ripe plums for the best flavour and texture. You can use any variety of plums. Red plums, Yellow plums, Black plums and Purple plums work well and brighten the cake.

Be careful not to overmix the batter to prevent a dense cake.

Use unsweetened Greek Yogurt to make the cake. Sweetened yogurt will make the cake too sweet.

Use plain, full fat yogurt if you don’t have Greek Yogurt.

Experiment with different spices, such as cinnamon, lemon zest, orange zest or ground cardamom, almond extract for added depth of flavour.

Store the yoghurt plum cake at room temperature in an airtight container for 2-3 days. Alternatively, refrigerate the cake for an extended shelf life of up to one week.

Use the right pan to bake the cake. If you use a smaller pan ( 8 inch), make sure the pan is taller, giving enough room for the batter to rise. You might also have to increase the baking time for the cake to bake completely.
