1 & ½ cups All-purpose flour 1 teaspoon Baking Powder ½ teaspoon Baking Soda ¼ teaspoon Salt 4 Plums pitted and sliced 1 cup Greek Yogurt unsweetened 1 cup Granulated Sugar 2 large Eggs ½ cup Oil 1 tablespoon Vanilla Extract 2 teaspoon Powdered Sugar for dusting
Preheat the oven to 350°F (175°C). Grease and line a 9-inch round cake pan.
Whisk together the flour, baking powder, baking soda, and salt in a bowl.
In another bowl, mix the Greek Yogurt, sugar, eggs, oil, and vanilla extract until well combined.
Gradually add the dry to the bowl of wet ingredients, mixing until just combined.
Pour the batter into the prepared cake pan and arrange the sliced plums on top.
Bake for 40-45 minutes or until a toothpick inserted into the center comes clean.
Allow the Yogurt plum cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
If desired, dust the top of the cooled plum yogurt cake with powdered sugar. Slice and serve the cake.
