Ingredients used to make Pumpkin Sauce Pasta
Pasta – I used penne. You can use any other variety that you prefer.
Pumpkin, Onion, Garlic, Tomato
Unsalted Butter – You can use oil in place of butter
Salt, Cayenne Pepper, Paprika Powder – Use any spices of your choice
Fresh parsley leaves – You can use cilantro / coriander leaves
Dried herbs – Dried oregano, dried thyme, or any Italian seasonings can be used.
Heavy Cream – Can be substituted with milk / coconut milk
Grated parmesan cheese – Any other grated cheese can be used in it’s place
Red chilli flakes – For an extra spice
How to make Easy and Creamy Pumpkin Pasta Sauce Recipe?
According to package instructions, boil a large pot of salted water and cook the pasta to al dente or the preferred texture. Once cooked, drain the pasta water and keep the pasta aside.
Add oil or unsalted butter to a pan. Once hot, add an onion, a few fresh garlic cloves, and pumpkin pieces. Cook until they are slightly roasted.
Add a tomato. Cook till it gets slightly mushy. Switch off and let the mixture cool down.
Make a fine paste of the pumpkin mixture.
Add butter or oil to the same pan. Once hot, add the fresh pumpkin puree. Add salt, cayenne pepper, and paprika powder. Next, add the cooked pasta and combine them.
Add cream and cook for a couple of minutes on low flame. Switch off.
Add dried herbs, fresh herbs, grated parmesan cheese, red pepper flakes if desired.
Serve the warm pumpkin pasta with your choice of side.
