Pumpkin sauce pasta with homemade pumpkin sauce is a delightful dish that combines cooked pasta with a rich and creamy sauce made from fresh pumpkin, onion, tomato, cream, and other spices.
According to package instructions, boil a large pot of salted water and cook the pasta to al dente or the preferred texture.
Add oil or unsalted butter to a pan. Once hot, add an onion, a few fresh garlic cloves, and pumpkin pieces. Cook until they are slightly roasted.
Add a tomato. Cook till it gets slightly mushy. Switch off and let the mixture cool down.
Make a fine paste of the pumpkin mixture.
