Ingredients
  

  • 1 cup Pasta I used penne
  • 1 tablespoon Oil / Butter
  • 1 small Onion
  • 4 cloves Garlic
  • 1 cup Pumpkin Pieces
  • 1 small Tomato
  • Salt to taste
  • ½ teaspoon Cayenne Pepper
  • ½ teaspoon Paprika Powder
  • ¼ cup Heavy Cream
  • 1 teaspoon Oregano or Thyme
  • 1 tablespoon Parsley
  • ¼ cup Grated Parmesan Cheese
  • Red Chilli Flakes as needed

Instructions
 

  • According to package instructions, boil a large pot of salted water and cook the pasta to al dente or the preferred texture.
  • Add oil or unsalted butter to a pan. Once hot, add an onion, a few fresh garlic cloves, and pumpkin pieces. Cook until they are slightly roasted.
  • Add a tomato. Cook till it gets slightly mushy. Switch off and let the mixture cool down.
  • Make a fine paste of the pumpkin mixture.
  • Add butter or oil to the same pan. Add the fresh pumpkin puree. Add salt, cayenne pepper, and paprika powder. Next, add the cooked pasta and combine them.
  • Add heavy cream and cook for a couple of minutes on low flame. Switch off.
  • Add dried herbs, fresh parsley leaves, grated parmesan cheese, red chilli flakes if desired.
  • Serve the warm pumpkin pasta with your choice of side.
