Vegan Mango Lassi

Mango season is here and it’s time for some delicious mango recipes. Lassi is a popular yogurt-based drink from the Indian Cuisine. It is a blend of yogurt and few spices. It can be either sweet or salty made by adding water and salt or sugar to yogurt. Mango lassi is one variety that is extremely popular. For making mango lassi, we simply need to add mango pulp or mango slices to this yogurt-based drink. You can use either canned mango pulp or cubed fresh or frozen mango. Traditionally, this drink is served as a part of traditional meals especially during summer. It is extremely refreshing for the hot weather in India.

Vegan Mango Lassi

My trip to Indian Grocery Stores and Indian Restaurants doesn’t end without a glass of Mango Lassi. Especially during summer. Such a bliss. A year back, we had few guests home for lunch and they preferred having a Vegan Lunch. In an attempt to make recipes that I haven’t tried before, I made this Vegan Mango Lassi as a part of the menu and the guests loved it. From then on, I make this once in a while when I feel like having some nice lassi at home.

For making Vegan Mango Lassi, we use coconut yogurt or any plant-based yogurt and non-dairy milk and a bit of spice and sweetener if required. Vegan Lassi is just as creamy and delicious as the regular ones. To get the best results, I strongly recommend using ripe and fresh mangoes. You can also use frozen, cubed mangoes. Though I haven’t tried using canned mango pulp, you can try using it too.

This Vegan Mango Lassi can be had as a breakfast, along with your meal, as a dessert or as a light drink during your snack time. I personally love finishing my meal with a glass of cold lassi. So satisfying!

How to make Vegan Mango Lassi

Making Mango Lassi is super simple. Peel and cut your mangoes into cubes. Just combine all the ingredients in a blender and puree until completely smooth. Taste and add more sweetener if required. You can also adjust the consistency by adding some more milk or some cold water. You can also freeze the mango cubes before making lassi. Gives a very creamy texture. Serve chilled with a bit of cardamom and garnished with chopped pistachios.

I have used Coconut Yogurt and Almond Milk in this recipe. Use any unsweetened yogurt and milk of your choice. Soy Yogurt is a popular and easily available option that can be used. Similarly, coconut milk gives a lovely flavour to this Lassi. To those who think this may not taste as good as the regular lassi that we have, do give it a try. You will definitely be impressed.

Lassi tastes best when fresh. It can be stored for a day in the refrigerator. Store it in a covered , air tight container and serve it within a day.

Ingredients

  • 1 cup Coconut Yogurt
  • 2 cups Mango Cubes
  • 1 cup Almond Milk
  • 1/2 tsp Cardamom Powder
  • 2-3 tsp Sweetener of your choice Optional

Instructions

  • Peel and chop the mangoes into cubes.
  • Add all the ingredients into a blender, and blend until completely smooth.
  • Sprinkle some finely chopped pistachios on top, if desired. Serve chilled.
  • This Vegan Mango Lassi can be refrigerated for a day.

Lassi is supposed to be a bit sour because of the yogurt. It is not as sweet as a milkshake. Depending on the sweetness of the mangoes, use sweetener of your choice. Sugar, Maple Syrup, Honey or any other substitute can be used. 
Adjust consistency to suit your preference. In general, lassi is a little thick like a smoothie. 
You can also add a couple of ice cubes while making the Lassi.
