Vegan Mango Lassi is a traditional Indian beverage that is rich, creamy, and absolutely delicious. This summer drink combines the sweetness of mangoes with the tanginess of yogurt.
Add all the ingredients into a blender, and blend until completely smooth.
Serve chilled.
Notes
I have used Coconut Yogurt and Almond Milk in this recipe. Use any unsweetened yogurt and milk of your choice. Soy Yogurt is a popular and easily available option that can be used. Similarly, coconut milk gives a lovely flavour to this Lassi. Lassi is supposed to be a bit sour because of the yogurt. It is not as sweet as a milkshake. Depending on the sweetness of the mangoes, use sweetener of your choice. Sugar, Maple Syrup, Honey or any other substitute can be used. Adjust consistency to suit your preference. In general, lassi is a little thick like a smoothie. You can also add a couple of ice cubes while making the Lassi.
