Pineapple Coconut Overnight Oats

All of us would like to start our day with an easy, healthy and delicious breakfast, isn’t it? Pineapple Coconut Overnight Oats is one of the best breakfast options! Just add all the ingredients to a jar, pop it into the refrigerator and they are perfectly ready the next morning. This Pineapple Coconut Oats typically brings the same flavours like Pina Colada without alcohol. The Tropical ingredients in this recipe simply make you feel like you are on the beach!

To give that Tropical Island /Pina Colada feel, top with a cherry. Decorate with a cute little umbrella for a perfect finishing touch. Throw in some silvered almonds for an added crunch. Perfect and beautiful, isn’t it?

Overnight Oats is oatmeal that’s made the previous night by mixing the required ingredients and leaving it to refrigerate overnight. The next day, you just grab the jar, adjust consistency to your liking, add any additional toppings you may like and just eat it.

Coming to the flavours of this recipe, I just love the creamy and rich flavour of coconut milk and the unsweetened dry coconut. Also, the mild sweetness from the pineapples gives a wonderful taste to this recipe. So yum and filling. Keeps you full for quite some time. The addition of chia seeds makes it more healthy.

Ingredients

  • 1/2 cup Old Fashioned Rolled Oats
  • 3/4 cup Chopped Pineapple
  • 1 cup Coconut milk I have used thin coconut milk
  • 1 tbsp Chia Seeds
  • 1/4 cup Unsweetened Desiccated Coconut
  • 1 tbsp Sweetener Optional, adjust as needed

For Topping

  • Coconut Chips, Desiccated Coconut, Chopped Nuts, Chopped Pineapple, Cherries Add as needed

Instructions

  • Add in all the ingredients in a mixing bowl or a jar. Close and refrigerate it for 5 hours minimum or overnight.
  • Remove from the refrigerator and top it with your favourite ingredients. Serve cold.

Notes

Sometimes, fresh pineapple can make the overnight oats bitter if stored for a long time. So, I would recommend making small portions a day or 2 in advance and finish it off.
You can also add all the other ingredients except pineapple and keep it overnight. Add the pineapple pieces finally while serving.
