Just add all the ingredients to a jar, pop it into the refrigerator and they are perfectly ready the next morning. This Pineapple Coconut Oats typically brings the same flavours like Pina Colada without alcohol. The Tropical ingredients in this recipe simply make you feel like you are on the beach!
To give that Tropical Island /Pina Colada feel, top with a cherry. Decorate with a cute little umbrella for a perfect finishing touch. Throw in some silvered almonds for an added crunch. Perfect and beautiful, isn’t it?
Overnight Oats is oatmeal that’s made the previous night by mixing the required ingredients and leaving it to refrigerate overnight. The next day, you just grab the jar, adjust consistency to your liking, add any additional toppings you may like and just eat it.
Coming to the flavours of this recipe, I just love the creamy and rich flavour of coconut milk and the unsweetened dry coconut. How to make this Easy Breakfast Recipe
Add all the ingredients in a bowl or jar. Add honey, maple syrup or sweetener of your choice.
Top with shredded coconut or chopped nuts.
Place the container in the refrigerator. Leave it overnight. It’s ready for breakfast the next morning!
This overnight oats is best eaten the next day, but it definitely lasts a couple of days.
Notes
If your pineapple is sweet, you will not need to add sweetener. Taste and add as needed.
You can use fresh pineapple or canned pineapple.

Pineapple Coconut Overnight Oats
Ingredients
- ½ cup Old Fashioned Rolled Oats
- ¾ cup Chopped Pineapple
- 1 cup Coconut milk I have used thin coconut milk
- 1 tablespoon Chia Seeds
- ¼ cup Unsweetened Desiccated Coconut
- 1 tablespoon Sweetener Optional, adjust as needed
For Topping
- Coconut Chips, Desiccated Coconut, Chopped Nuts, Chopped Pineapple, Cherries Add as needed
Instructions
- Add in all the ingredients in a mixing bowl or a jar. Close and refrigerate it for 5 hours minimum or overnight.
- Remove from the refrigerator and top it with your favourite ingredients. Serve cold.
