This easy pineapple chia jam is made with just pineapples and chia seeds and takes less than 20 minutes to whip up. It’s loaded with goodness from the fruit and chia seeds, with no added sugar.
I recently posted a strawberry chia pudding recipe and have mentioned that I love including chia seeds in my food regularly. I add them to my overnight oats, pancake mix etc. Apart from these options, this Pineapple Chia Jam is another delicious and wonderful option because it’s so easy to prepare and can be added to quite a few breakfast recipes. I love adding jam to a bowl of Greek yogurt, on top of my freshly made bread or to my jar of oatmeal. I also love having it with Rotis. Try it if you haven’t had this combination.
The health benefits of chia seeds add up to the beauty of this jam. Also, the chia seeds help the jam thicken up, without the addition of pectin.

Replace with any other fruit of your choice.
This Pineapple Chia Jam in Instant Pot is sweetened with Maple Syrup. A friend of mine gifted me a huge bottle of Maple Syrup purchased from a local farm. Tastes so good! If you don’t have maple syrup, you can use good quality honey in its place.

How to make this Jam
Peel and cut ripened pineapple. Switch on and keep the Instant Pot on SAUTE mode.
Add the cut pineapple pieces along with lime juice, maple syrup and chia seeds to the POT. Give a mix and saute for 2-3 mins.
Close the lid and turn the valve to SEALING position. PRESSURE COOK for 10 mins on HIGH PRESSURE.
Once done, release pressure quickly. Open the lid and using an immersion blender, puree the ingredients in the POT.
Switch on the SAUTE mode in the Instant Pot and let the pineapple jam cook for a few more minutes. At this point, you can taste the jam and add more maple syrup if needed. Switch off once Jam reaches desired consistency.
Pineapple Chia Jam in Instant Pot is ready to be served!
Once cooled down to room temperature, store in an airtight glass bottle in the refrigerator.
This jam stays good for up to a month in the refrigerator when stored in a clean airtight container. Always handle with a fresh and dry spoon.
You can also freeze the jam in freezer-safe containers for up to a year.
