Pineapple Chia Jam in Instant Pot

Ingredients
  

  • 3 cups Pineapple roughly chopped
  • 2 tablespoon Lemon Juice
  • 6 tablespoon Maple Syrup
  • 3 tablespoon Chia Seeds

Instructions
 

  • Roughly chop ripened pineapple into medium sized pieces.
  • Switch on and keep the Instant Pot on SAUTE mode.
  • Add the cut pineapple pieces along with lime juice, maple syrup and chia seeds to the POT.
  • Give a mix and SAUTE for 2-3 mins.
  • Close the lid and turn the valve to SEALING position. PRESSURE COOK for 10 mins on HIGH PRESSURE.
  • Once done, release pressure quickly. Open the lid and using an immersion blender, puree the ingredients in the POT.
  • Switch on the SAUTE mode in the Instant Pot and let the pineapple jam cook for a few more minutes. At this point, you can taste the jam and add more maple syrup if needed. Switch off once Jam reaches desired consistency.
  • Once cooled down to room temperature, store in an airtight glass bottle in the refrigerator.

Notes

This jam stays good for up to a month in the refrigerator when stored in a clean airtight container. Always handle with a fresh and dry spoon.

You can also freeze the jam in freezer-safe containers for up to a year. Use well-ripened pineapple for this Pineapple Chia Jam.
Lemon Juice is not just for the flavour. The pH level plays a role in helping the jam set without pectin. So, don't skip it. 
I like my jam with some texture, but if you like to have a smooth consistency, you can blend the mixture until smooth. 
Always store the jam in a moisture-free airtight container.
Cook until you reach the right consistency. 
You can use honey or sugar in place of maple syrup. Adjust the quantity according to the sweetness of the fruit.
Use any other fruit in place of pineapple.
