How to make Vegan Mango Lassi

Peel and cut the mangoes into cubes. Add the mango pieces, yogurt, cardamo powder, milk and your choice of sweetener to a blender and puree until completely smooth.

Taste the vegan lassi and add more sweetener if required.

You can also adjust the consistency by adding more milk or cold water/ice cubes. You can also freeze the mango cubes before making lassi, which gives it a very creamy texture.

Serve immediately, garnished with a sprinkle of cardamom, chopped nuts or a few mango chunks.

  • Choosing Mangoes: For the best flavour, use ripe, sweet mangoes. Alphonso mangoes are a great choice.

  • Consistency: Adjust the amount of non-dairy milk to achieve your desired consistency. Less milk makes a thicker lassi, and more makes a thinner one.

Ingredients
  

  • 1 cup Coconut Yogurt
  • 2 cups Mango Cubes
  • 1 cup Almond Milk
  • ½ teaspoon Cardamom Powder
  • 2-3 teaspoon Sweetener of your choice Optional

Instructions
 

  • Peel and chop the mangoes into cubes.
  • Add all the ingredients into a blender, and blend until completely smooth.
  • Serve chilled.

Notes

I have used Coconut Yogurt and Almond Milk in this recipe. Use any unsweetened yogurt and milk of your choice. Soy Yogurt is a popular and easily available option that can be used. Similarly, coconut milk gives a lovely flavour to this Lassi. 
Lassi is supposed to be a bit sour because of the yogurt. It is not as sweet as a milkshake. Depending on the sweetness of the mangoes, use sweetener of your choice. Sugar, Maple Syrup, Honey or any other substitute can be used. 
Adjust consistency to suit your preference. In general, lassi is a little thick like a smoothie. 
You can also add a couple of ice cubes while making the Lassi.
