    Malai Broccoli is a gorgeous and delicious appetizer that’s easy to prepare. Broccoli coated with a rich and creamy marinade is cooked to make a well-roasted Malai Broccoli perfect for all occasions.

    Broccoli is not one of my favourites but this recipe quickly made me fall in love with this vegetable. Greek Yogurt, Fresh cream and grated cheese are added to the marinade along with other flavourful spices. This makes the appetizer a rich and delicious one.

    Most Vegetarians usually stick to Paneer, Mushroom or Cauliflower Tikka for starters. But this gorgeous-looking Malai Broccoli along with Mint Cilantro Chutney is sure to impress anyone.

    As I mentioned earlier, I am not a big fan of Broccoli. My husband is allergic to Broccoli and that became an opportunity for me to avoid this vegetable in my kitchen. My daughters tasted Broccoli in a restaurant and requested me to make something similar at home for them to eat. I just couldn’t say no and decided to make this long-time pending appetizer.

    I came across this dish in a Tamil television cookery competition, a year back. The presentation and the way it was prepared made me curious. That’s when it became a part of my to-do list. Finally, after a year, I got an opportunity to make this recipe and was definitely not disappointed.

    I am not sure if this is how the original recipe tastes. I have never tasted Malai Broccoli prior to attempting this dish . This recipe is slightly crispy on the outside and creamy melt in the mouth on the inside. We all loved it and I am sure you will love it too.

    How to make Malai Broccoli

    Wash and chop broccoli into medium size florets.

    Add enough water to a pan, boil the water and add the broccoli florets to the water. Blanch for 3-4 minutes. Immediately drain the water and wash it once in cold water.
    Pat dry and keep it aside.

    In a bowl, add Greek Yogurt, fresh Cream, ginger garlic paste, salt, and grated cheese. Whisk well.

    How to make Malai Broccoli

    Next, add red chilli powder, pepper powder, cumin powder, gram flour, garam masala, chaat masala. Add in the Broccoli florets.

    Mix well without breaking the florets. Make sure all the Broccoli florets are coated well. Cover the bowl and let it marinate in the refrigerator for an hour.

    Preheat your oven to 400F. Line a baking sheet with parchment paper and arrange the broccoli florets on the sheet. Bake for 20 minutes at 400F.

    Broil on high for 2 mins till the florets turn slightly golden brown.

    Serve Malai Broccoli with Green Chutney.

    Notes

    Thick , hung curd can be used in place of Greek Yogurt.

    Cheese cubes or cheese slices can be melted and added to the recipe instead of grated cheese.

    Serving Suggestions

    Malai Broccoli is best served as an appetizer along with Green Chutney, Tomato Ketchup or Mayonnaise. I love eating it as it is.

    You could also serve it in a bowl along with some Soup or Salad. Makes a delicious and filling dinner.

    Ingredients
      

    • 1 medium Broccoli around 4 cups florets
    • 1/2 cup Greek Yogurt
    • 3 tbsp Fresh Cream
    • 1/3 cup Grated Cheese
    • 1/2 tsp Salt
    • 1 tsp Ginger Garlic Paste
    • 1/4 tsp Red Chilli Powder
    • 1/4 tsp Black Pepper Powder
    • 1/2 tsp Cumin powder
    • 2 tbsp Garam Masala
    • 1/2 tsp Gram Flour
    • 1/4 tsp Chaat Masala optional
