Ingredients Required to Make Beetroot Rice in Instant Pot
Basmati rice, Beetroot, Onion, Green Peas, Ginger-Garlic Paste, Green Chilli, and Whole Garam Masala are the most important ingredients.
We also need oil, salt, water and red chilli powder, garam masala, cumin powder & turmeric powder.
How to make Beetroot Rice in Instant Pot
Wash and rinse the Basmati Rice a couple of times. Soak it in water for 20 minutes.
Meanwhile, slice the onions, green chilies and finely chop or grate the beetroots.
Set the Instant Pot on Saute button. Add oil to the pot. Once it gets hot, add fennel seeds, bay leaf, cinnamon stick, cardamom, clove, and star anise. Saute until a nice aroma comes.
Add in the sliced onions. Saute for a minute. Add in green chilli & ginger garlic paste. Saute for 30 seconds or until the raw smell goes off.
Add in frozen or fresh peas & saute for less than a minute.
Now add beetroot & saute for a minute.
Add salt, turmeric powder, cumin powder, chilli powder & garam masala.
Let it cook for 2-3 minutes. Add water. Check for salt. Now, add the soaked and drained basmati rice.
Close the pot. Press the manual or pressure cook button and cook on high pressure for 5 minutes with the pressure valve in the sealing position.
Let the pressure release naturally for 5 minutes, and then quickly release the remaining pressure. Open, garnish with some chopped coriander leaves. Let the rice stay untouched for 5 minutes.
Gently fluff it with a fork. Serve this hot and delicious Beetroot Rice with some raita.
Serving Suggestions
Instant Pot Beetroot Rice is best served with some mild raita. I usually prefer some cucumber raita, onion raita or zucchini raita. You can also try my eggplant raita or okra raita with this rice. Goes well with the subtle sweetness of this Beetroot Pulao. Instant Pot Beetroot Pulao can also be served with chips, papad or potato fry.
Tips for Perfect Beetroot Rice
Grate the Beetroot Finely: Ensure the beetroot is grated finely to allow it to cook evenly with the rice. This also helps in getting a beautiful color.
Adjust Spices to Taste: Tailor the amount of green chili and red chili powder to suit your spice preference.
Use Basmati Rice: The fragrant and long grains of basmati rice complement the flavors of beetroot exceptionally well.
