Instant Pot Beetroot Rice or Beetroot Pulao is yet another favourite recipe of mine. If you are not a fan of beetroot, do give this recipe a try. You will instantly change your mind. This Beetroot Rice recipe is simple, quick to prepare and mildly spiced. Best way to sneak in beetroot and is a kid-friendly meal. Also, a perfect one-pot meal for a lunchbox or a busy day.
I know a lot of people who hate beetroot. Not sure why. Maybe because of the mild sweetish taste. Or because back home, they rarely try a variety of recipes using beetroot. Growing up, I hardly ate a few different dishes made out of beetroot and those were repetitive and boring. When I started baking, I was introduced to Beetroot Cake and that’s when I realized plenty of recipes could be made out of this beautiful vegetable.
That’s when I started making raita, cake, vada, halwa, kola urundai and so many other recipes using beetroot. Among these, this Instant Pot Beetroot Rice Recipe is my most favourite one. Very convenient to make on a busy working day. Great way to incorporate this awesome vegetable too. Beetroot Rice not only looks beautiful, but it is also very flavourful even though we use very minimal spices. It is mildly spicy with a tinge of sweetness from beetroot.
To make it more appealing and to add some extra flavour, I have included green peas as well in this Rice. You can also include carrots, beans, potatoes in this recipe. Also, you can make the recipe in a stovetop pressure cooker easily.

Ingredients Required
Basmati rice, Beetroot, Onion, Green Peas, Ginger Garlic Paste, Green Chilli, Whole Garam Masala are the most important ingredients.
Apart from these, we, of course, need oil, salt, water and red chilli powder, garam masala, cumin powder & turmeric powder.
How to make this Rice in Instant Pot
Wash and rinse the Basmati Rice a couple of times. Soak it in water for 15 mins.
Meanwhile, slice the onions green chilli and finely chop or grate the beetroots.
Press the Saute button. Add oil to the pot. Once it gets hot, add fennel seeds, bay leaf, cinnamon, cardamom, clove, star anise. Saute until a nice aroma comes.
Add in the sliced onions. Saute for a minute. Add in green chilli & ginger garlic paste. Saute for 30 seconds.
Add in frozen or fresh peas & saute for less than a minute.
Now add beetroot & saute for a minute.
Add salt, turmeric powder, cumin powder, chilli powder & garam masala.
Saute for a minute. Add water. Check for salt. Now, add the soaked and drained basmati rice.
Close the pot. Press the manual or pressure cook button and cook on high pressure for 5 minutes, with the pressure valve in the sealing position.
Let the pressure release naturally for 5 minutes and then do a quick release. Open, garnish with some chopped coriander leaves. Let the rice stay untouched for 5 minutes.
Gently fluff it with a fork. Serve hot with some raita.
Serving Suggestion
Instant Pot Beetroot Rice is best served with some mild raita. I usually prefer some cucumber or zucchini raita. You can also try my eggplant raita with this rice. This Rice can also be served with chips, papad or potato fry.

- 1 cup Basmati Rice
- 1&1/2 cup Beetroot finely chopped or grated
- 1/2 cup Green Peas optional
- 1 Onion Medium, thinly sliced
- 2 Green Chilli slit
- 1 tsp Ginger Garlic Paste
- 1&1/2 cup Water
- Salt as needed
- 1 tbsp Oil
Whole Spices
- 1 Bay Leaf
- 1 tsp Fennel Seeds
- 1 Star Anise
- 1 inch Cinnamon Stick
- 1 Cardamom
- 1 Clove
Spice Powders
- 1/4 tsp Turmeric Powder
- 1 tsp Red Chilli Powder
- 1 tsp Cumin Powder
- 1/2 tsp Garam Masala
Instructions
