    Delicious Roasted Eggplant Raita can be made easily by roasting the eggplant on a stovetop or using the air fryer. A perfect side dish for Rotis, Paratha, Pulao, and Biryani. It is a simple recipe made using roasted eggplant, yogurt, and minimal spices.

    I am a huge fan of eggplant! If you are an eggplant lover like me, then this recipe will surely please you. Not many I know are fans of eggplant. But this raita has impressed quite a few of my friends. This eggplant raita pairs up well with Biryani, Rotis, or the South Indian Famous Vatha Kuzhambu. You would repeatedly want to make this one. Roasted Eggplant Raita tastes that good!

    Roasted Eggplant Raita, also known as Sutta Kathrikai Thayir Pachadi in Tamil, is a favorite in our family. Recently when I was in conversation with my grandmother, she suggested this eggplant raita as an excellent side dish for Puli Pongal (A South Indian delicacy). That’s when I realized it’s been a long time since I made this raita. So this time when I made it, I decided to share it on the blog as well.

    If you are someone like me who is always in search of different recipes to use Eggplant in, this option will definitely tempt you.

    Roasted Eggplant Raita served with Rice or Roti.

    Roasting the Eggplant

    For this raita, I usually roast the eggplant on the fire/gas cooktop. I am a big fan of roasting eggplant on direct fire. The flavor and taste are amazing when cooked this way.
    Recently I tried cooking the eggplant in my air fryer and was absolutely impressed with the result. It came out perfect and was mess-free as well. If you own an air fryer, do try roasting the eggplant in yours. Makes the job easy and gets done quite fast.

    Step by Step Instructions ( Stovetop Method )

    Wash an eggplant, pat dry, and brush oil on the entire eggplant. Roast it on direct flame.

    Once cooled down and easy to handle, remove the skin. Discard the skin.

    Add the eggplant to a bowl and mash thoroughly using a fork or masher.

    Add a cup of Yogurt, and the required amount of salt to the mashed eggplant.

    Add Chaat Masala to the raita. This step is optional. You can omit it if you don’t prefer chaat masala or you can add any other spice/flavoring of your choice. We personally love the tanginess of chaat masala in raita.

    Now it’s time to temper the raita. Keep a pan on medium flame and add 1 tsp oil. Once hot, add mustard seeds. Once it splutters, add chana dal, urad dal, chopped curry leaves, and a tsp of red chili powder. Switch off and add the tempering to the raita. Add chopped coriander leaves on top. Serve the roasted eggplant raita!

    How to Roast the Eggplant using an Air Fryer

    Brush the eggplant with some oil. Preheat the air fryer to 375F. Once the air fryer is ready, place the eggplant on the air fryer basket. Air fry for 20 minutes at 375F. Once done, remove the eggplant from the air fryer and remove the skin easily.

    Notes

    Adjust the quantity of yogurt according to your desired consistency.

    Adding red chilli powder, and chaat masala to the raita is completely optional. We personally love the taste and flavour when we add these two to the raita. You can add any masala powder of your choice to flavour the raita.

    Any South Indian recipe is incomplete without tempering on top. If you do not prefer tempering your raita with mustard seeds etc, do feel free to omit it.

    Ingredients
      

    • 1 medium Eggplant
    • 1 cup Yogurt
    • Salt to taste
    • 1/2 tsp Chaat Masala
    • 1 tsp Red Chilli Powder
    • 2 tsp Oil
    • 1 tsp Mustard
    • 1 tsp Urad Dal
    • 1 tsp Chana Dal
    • Few Curry Leaves finely chopped
    • 1 tbsp Coriander leaves finely chopped

    Instructions
     

    • Wash and pat dry the eggplant thoroughly. Apply a tsp of oil on the entire surface of the eggplant. Roast it on fire until fully charred.
    • Allow it to cool. Once easy to handle, peel the skin, add the eggplant to a bowl and mash the eggplant.
    • Add yogurt, salt and chaat masala. Mix well.
    • In a pan, add remaining oil. Once hot, add mustard seeds, urad dal, chana dal, curry leaves, red chilli powder. Once mustard seeds splutter, add the tempering to the raita. Add coriander leaves to the raita.
    • Seve as an accompaniment for rice or rotis.

    Roast the Eggplant in Air Fryer

    • Brush the eggplant with some oil. Preheat the airfryer at 375F. Once the airfryer is ready, place the eggplant on the airfryer basket. Air fry for 20 minutes at 375F. Once done, remove the eggplant from the airfryer and remove the skin easily.
