Instant Pot Tomato Soup with Fresh Tomatoes (No Cream)

Tomato soup is a classic and popular soup made primarily from tomatoes. It typically features a combination of fresh tomatoes, onions, garlic, carrots, vegetable broth, and various herbs and spices.

Ingredients
  

  • 6 medium Tomatoes ripened, chopped
  • 1 medium Onion chopped
  • ½ cup Carrot chopped
  • 1 & ½ tablespoon Butter / Olive Oil
  • 2 Bay Leaf
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Coriander Seeds
  • 5 cloves Garlic finely chopped/minced
  • 2 cups Vegetable Broth or Water
  • ½ cup Coriander Leaves with stem
  • 3 teaspoon Dried Basil
  • ½ teaspoon Paprika Powder
  • Salt as needed
  • ½ teaspoon Sugar
  • Pepper Powder as needed
  • Croutons to garnish

Instructions
 

  • Set the Instant Pot to sauté mode. Add butter or olive oil, cumin seeds, bay leaf, coriander seeds, chopped onions and garlic. Sauté until the colour of the onion and garlic slightly changes.
  • Add chopped carrots. Sauté for a couple of minutes. Add in the fresh tomatoes, dry basil, and coriander leaves. Add salt, sugar, and paprika powder. Sauté for an additional 2-3 minutes.
  • Add the vegetable stock or water. Seal the Instant Pot and set it to pressure cook mode(High Pressure) for 10 minutes. Let the pressure release naturally for 10 minutes. Quickly release the remaining pressure.
  • Once cooked, use an immersion blender to blend the soup until smooth.
  • Alternatively, you can transfer the cooked mixture to a regular blender, blend in batches and puree until smooth. Make sure the mixture is cooled down to room temperature before blending.
  • Then, strain the blended puree using a fine mesh sieve and discard the residue. This step is essential to get a fine soup.
  • Add the soup back to the Instant Pot. Set the Instant Pot on "Keep Warm" Mode.
  • Season with salt and black pepper powder to taste.
  • Ladle the tomato soup into bowls, garnish with croutons or fresh basil leaves, and serve the hot soup.

Notes

To make this recipe vegan, skip the butter and add olive oil or any other neutral-flavoured oil.
