Eggless Tutti Frutti Cake

Ingredients
  

Dry Ingredients

  • 1 & ½ cups All-Purpose Flour
  • ¼ teaspoon Salt
  • 1 teaspoon Baking Powder
  • ½ teaspoon Baking Soda

Wet Ingredients

  • ½ cup Butter softened
  • ¾ cup Sugar
  • ½ cup Yogurt
  • ¾ cup Milk
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Lemon Zest
  • ¾ cup Tutti Frutti

Extra

  • 1 tablespoon All-Purpose Flour to coat in tutti frutti
  • 2 teaspoon Tutti Frutti for topping

Instructions
 

  • Preheat oven to 350F/180C. Grease and line an 8*4 loaf pan.
  • In a bowl, sift in the "dry ingredients". Mix together and keep it aside.
  • In another bowl, toss ¾ cup tutti frutti in 1 tablespoon of all-purpose flour. Coat fully and keep it aside.
  • Take a bowl. Add softened butter. Beat for 2 minutes. Now, add sugar and beat till light and fluffy. Next, add yogurt, and whisk for a minute.
  • Add vanilla extract, and lemon zest and mix until combined.
  • Add the dry ingredients little by little and gently fold them in.
  • Finally, add milk little by little and mix until all the ingredients are combined.
  • Now add the tutti frutti coated in all-purpose flour. Gently fold it in the batter.
  • Pour the batter into the prepared loaf pan.
  • Top it with 2 more teaspoon of tutti frutti.
  • Bake at 350F for 45 to 50 minutes or till a toothpick inserted in the center comes out clean.
  • Let the cake cool down for 10 minutes. Run a knife around the edges of the cake and remove the cake from the loaf pan. Cut and serve.

Notes

Make sure the ingredients are mixed together. Do not overmix at any point. Over mixing the ingredients results in a dense cake texture.
To prevent the Tutti Frutti from sinking at the bottom of the cake pan, we add 1 tablespoon all-purpose flour to the tutti frutti & coat well. Do not skip this step.
