Zucchini banana bread is a quick bread that combines shredded zucchini and mashed bananas as the main ingredients. Zucchini banana bread can be enjoyed as a breakfast treat or as a snack, and it's a great way to use leftover zucchini or overripe bananas.
Preheat the oven to 350°F (180°C). Grease and line a 9x5-inch loaf pan.
Whisk together the flour, baking soda, baking powder & salt. Keep aside.
Add the bananas to a large bowl. Mash it completely. Add egg and whisk well. Add sugar. Combine until well mixed.
Add oil & vanilla extract. Mix until combined.
Add the dry ingredients to the wet ingredients and gently combine until a smooth batter is formed.
Finally, add the grated zucchini and mix until just combined.
Pour the batter into the prepared loaf pan.
Bake for 50 minutes or until a toothpick inserted into the center of the bread comes out clean.
Let the bread cool in the pan for 10 minutes, then remove it and transfer it to a wire rack to cool completely.Slice and serve the moist zucchini banana bread, and enjoy!
Notes
You can add nuts or chocolate chips to the batter for extra flavour and texture.
