These Easy Avocado Chocolate Truffles are one of the easiest desserts out there. Prepare this quick, easy and no-bake dessert with just a handful of simple ingredients.
Pulse the avocado in a food processor or mash the avocado thoroughly using a fork.
Place chocolate chips along with vanilla extract in a microwave-safe bowl and microwave at 30-second intervals, stirring after each interval, until completely melted. Stop heating as soon as it’s melted. I used the double boiler method. For this method, heat a saucepan with ¼ cup water. Once the water starts boiling, place the bowl of chocolate chips + vanilla extract on top of the saucepan. Stir until the chocolate chips are melted and remove immediately.
Add the melted chocolate to the bowl of mashed avocado and mix it thoroughly.
Place the truffle mixture in the fridge to set for 30 minutes.
Once the chocolate avocado mixture has firmed up a bit, remove it from the fridge and make the truffles by rolling a tablespoon at a time into small balls. I prefer applying some oil on my hand while doing this so that the chocolate mixture doesn't stick to the hands.
Roll the truffles in the toppings and store them in the refrigerator.

Store these healthy chocolate avocado truffles in the fridge for 4 days or in the freezer for a couple of months. Pack them in freezer-safe bags and store them. Depending on your taste, you can adapt this recipe. I used semi-sweet chocolate chips. If you prefer dark chocolate, please go ahead and use them. You can also use sugar-free chocolate chips and add a bit of stevia for the sweet taste. Use finely chopped nuts, shredded coconut, cocoa powder, chocolate sprinkles as a topping. You can use any kind of nut for the toppings. Almonds, Hazelnuts, Pecans, Walnuts or Pistachios! Everything goes well. Use ripened avocados and good quality chocolate chips for the best truffles.Always keep them chilled.
