Crispy and easy air-fried zucchini fries transform the simple zucchini into a savoury treat that's both healthy and bursting with taste. These golden brown, flavourful zucchini slices are perfect for snacking, serving as a side dish, or as an appetizer.
Cut the zucchini into ¼-inch thick slices. Pat them dry with a paper towel to remove excess moisture.
In a large mixing bowl, combine chickpea flour/gram flour, rice flour, corn starch, cumin powder, coriander powder, turmeric powder, red chilli powder, garam masala, chaat masala, salt, and pepper powder. Mix well.
Add a little water to the dry mixture to create a thick, lump-free batter. It should be thick enough to coat the zucchini slices but not too runny.
Dip each zucchini slice into the batter, ensuring an even coat. Let any excess batter drip off.
Roll the batter-coated zucchini slices in panko breadcrumbs to coat both sides thoroughly.
Preheat your air fryer to 400°F (200°C) for about 3 minutes.
Spray the air fryer basket with cooking spray or brush some oil.
Arrange the coated zucchini slices in a single layer in the air fryer basket.
Air fry at 400°F (200°C) for 12 minutes. Flip the slices halfway through and air fry until golden brown and crispy. While flipping, Brush with some oil on top of the zucchini slices for extra crispiness.
Serve the zucchini chips immediately with your favourite dipping sauce. They pair well with any chutney or sauce of your choice.
