Take the baby potatoes in a bowl. Wash and scrub them thoroughly. Add a pinch of salt and cook the potatoes until ¾th done. I cooked them for 2 whistles in a pressure cooker.
Once done, transfer them to a plate and gently press them with your palm or a back of a spoon.
In a bowl, add the ingredients for the cajun sauce and mix it well. Make sure it is pourable. Keep it aside.
In another bowl, add the ingredients for the batter and dip the potatoes in the batter. A thin coating is enough. Deep fry or shallow fry the potatoes in oil. They should be golden and crip.
In a serving plate, place the fried potatoes. Add the sauce on top of it. Garnish and serve immediately.
Notes
1)If using readymade cajun spice mix, add 2 teaspoon first and add more if needed. 2)The mayonnaise and tomato sauce already has salt. So be careful while adding salt to the sauce. 3)Adjust spice powders according to your desired spice level. 4)You can also add finely cut onions in place of onion powder. Do not skip the garlic powder though. It gives a great flavour.
