Cajun Potatoes Recipe Barbeque Nation Style

Creamy Cajun sauce poured over deep fried potatoes and served as an appetizer.

Ingredients
  

To cook the potatoes

  • 20 baby potatoes
  • salt to taste

For the Cajun Sauce

  • ¾ cup mayonnaise
  • 1 tablespoon tomato sauce
  • 1 teaspoon honey
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon oregano
  • 1 teaspoon red chilli flakes
  • 1 & ½ teaspoon red chilli powder
  • ½ teaspoon pepper powder
  • 2 or 3 tablespoon milk
  • salt to taste

For the batter

  • 3 tablespoon cornflour
  • 2 tablespoon maida
  • water as needed

For frying

  • oil as needed

For garnishing

  • chilli flakes as needed
  • 1 tablespoon cilantro finely chopped

Instructions
 

  • Take the baby potatoes in a bowl. Wash and scrub them thoroughly. Add a pinch of salt and cook the potatoes until ¾th done. I cooked them for 2 whistles in a pressure cooker.
  • Once done, transfer them to a plate and gently press them with your palm or a back of a spoon.
  • In a bowl, add the ingredients for the cajun sauce and mix it well. Make sure it is pourable. Keep it aside.
  • In another bowl, add the ingredients for the batter and dip the potatoes in the batter. A thin coating is enough. Deep fry or shallow fry the potatoes in oil. They should be golden and crip.
  • In a serving plate, place the fried potatoes. Add the sauce on top of it. Garnish and serve immediately.

Notes

1)If using readymade cajun spice mix, add 2 teaspoon first and add more if needed. 
2)The mayonnaise and tomato sauce already has salt. So be careful while adding salt to the sauce. 
3)Adjust spice powders according to your desired spice level. 
4)You can also add finely cut onions in place of onion powder. Do not skip the garlic powder though. It gives a great flavour.
