Toppings of your choice- I have used chopped strawberries and grated dark chocolate.
Instructions
Add strawberries, milk, maple syrup and vanilla to a blender.
Blend till you get a smooth mixture.
Transfer to a bowl and add chia seeds to it.
Give it a good mix and cover with a lid.
Refrigerate for a couple of hours to overnight. Let it set.
Remove it from the refrigerator, mix again and transfer it to serving cups.
Top it with your favourite toppings. I have used chopped strawberries, grated dark chocolate.
Serve.
Notes
I made my pudding in a large bowl and divided it into small containers once set. You can also make these in individual mason jars directly and let them set in the jar. You can add chia seeds along with berries and milk in the blender. Since we love eating the chia seeds like tapioca, we enjoy this consistency. If you don't want to use the blender at all, add finely chopped strawberries along with the other ingredients to a bowl and give a good mix. You can use any milk of your choice - Few options are Regular whole milk, Oat milk, Soy Milk Instead of maple syrup, you can use honey or any other sweetener of your choice. Use until you reach the right amount of sweetness. This also depends on how sweet the berries are.Give enough time for the pudding to set. If you feel the consistency is too thick, add some more milk and let it sit for few more hours. If the consistency turns out to be thinner than what you like, add some chia seeds and let it sit for a couple of more hours.
