Place the Biscoff cookies in a food processor and pulse until you have fine crumbs.
Combine the Biscoff cookie crumbs, softened cream cheese, softened Biscoff Spread and vanilla extract in a bowl. Mix well.
Scoop out small portions of the mixture and roll them into bite-sized balls. Place them on a parchment-lined tray.
For an hour, place the tray in the refrigerator to firm up the truffle balls.
Melt the chocolate chips and coconut oil or butter in a heatproof bowl. You can do this over a double boiler or in short bursts in the microwave, stirring frequently.
Dip each chilled truffle into the melted chocolate, ensuring it's completely coated. You can use a fork to lift the truffle out of the chocolate, allowing any excess to drip off.
Place the coated truffles back on the parchment-lined tray. Sprinkle some additional Biscoff cookie crumbs or drizzle some melted Biscoff spread for desired decoration.
Return the tray to the refrigerator to allow the chocolate coating to set well. This usually takes about 2 hours.
Once the chocolate is set, your No Bake Biscoff chocolate truffles are ready to be enjoyed! Store them in the refrigerator until you're ready to serve.
