Ingredients

  • 30 cookies Biscoff Cookie Crumbs
  • ½ cup Cream Cheese Softened
  • ¼ cup Biscoff spread
  • 1 teaspoon Vanilla Extract
  • 2 cups Semi-Sweet Chocolate Chips
  • 1 tablespoon Coconut Oil or Unsalted Butter
  • Crushed Biscoff Cookies / Melted Biscoff Spread For topping

Instructions

  • Place the Biscoff cookies in a food processor and pulse until you have fine crumbs.
  • Combine the Biscoff cookie crumbs, softened cream cheese, softened Biscoff Spread and vanilla extract in a bowl. Mix well.
  • Scoop out small portions of the mixture and roll them into bite-sized balls. Place them on a parchment-lined tray.
  • For an hour, place the tray in the refrigerator to firm up the truffle balls.
  • Melt the chocolate chips and coconut oil or butter in a heatproof bowl. You can do this over a double boiler or in short bursts in the microwave, stirring frequently.
  • Dip each chilled truffle into the melted chocolate, ensuring it's completely coated. You can use a fork to lift the truffle out of the chocolate, allowing any excess to drip off.
  • Place the coated truffles back on the parchment-lined tray. Sprinkle some additional Biscoff cookie crumbs or drizzle some melted Biscoff spread for desired decoration.
  • Return the tray to the refrigerator to allow the chocolate coating to set well. This usually takes about 2 hours.
  • Once the chocolate is set, your No Bake Biscoff chocolate truffles are ready to be enjoyed! Store them in the refrigerator until you're ready to serve.
