No Bake Almond Flour Chocolate Truffles Recipe

Ingredients
  

For the Truffles

  • 1 cup Almond Flour
  • ¼ cup Sweetened Condensed Milk
  • 2 tablespoon Almond Butter or Cashew Butter, Peanut Butter
  • 2 tablespoon Melted Coconut Oil
  • 1 teaspoon Vanilla Extract

For the Chocolate Coating

  • 150 grams Semi Sweet Chocolate
  • 1 tablespoon Coconut Oil

Optional toppings for decoration

  • Chopped nuts, unsweetened shredded coconut, or finely grated almond pieces

Instructions
 

Step 1: Mixing the Ingredients

  • Add almond flour to a bowl. In a separate bowl, combine the sweetened condensed milk, nut butter, melted coconut oil, and vanilla extract. Make sure the wet mixture is well blended.

Step 2: Forming the Truffle Mixture

  • Pour the wet mixture into the almond flour and mix until a dough forms. Once the dough comes together, place it in the refrigerator for about 20-30 minutes to firm up slightly.

Step 3: Shaping the Truffles

  • After the dough has firmed up, it's time to shape it into small truffle-sized balls. This is where you can get creative and personalize the size of your truffles.

Step 4: Preparing the Chocolate Coating

  • In a heatproof bowl, melt the semi-sweet or dark chocolate with coconut oil until it's smooth and silky. This is the luscious coating that will coat your almond flour truffles.

Step 5: Coating the Truffles

  • Let the chocolate mixture come to room temperature. Dip each truffle into the melted chocolate, ensuring it's fully coated.
  • Let any excess chocolate drip off, and then place the coated truffles on a parchment paper-lined tray.

Step 6: Adding Optional Toppings

  • While the chocolate coating is still wet, sprinkle your chosen optional toppings onto the truffles. Chopped nuts, shredded coconut, silver or gold foil and cocoa powder are popular choices.

Step 7: Setting the Chocolate Coating

  • Allow the chocolate coating to set by placing the tray in the refrigerator for at least 30 minutes. This is the stage where your truffles will firm up.
  • Enjoy your no bake almond flour truffles. Store any leftovers in the refrigerator.
