Cheese Corn Sandwich is an easy and wonderful treat that can be made in less than 20 minutes. It combines the sweetness of corn with the richness of cheese, making it a perfect snack or light meal for any time of the day.
½cupGrated Cheese(Cheddar or Mozzarella work well)
½cupCorn Kernels(Fresh or Frozen)
3tablespoonButter
4teaspoonMayonnaise
1 & ½teaspoonRed Chilli Sauce
1teaspoonItalian Seasoning
½teaspoonRed Chilli Flakes
1tablespoonGrated Cheese(To sprinkle on top before toasting)
Instructions
Boil sweet corn kernels until tender. Let them cool. If using frozen corn, cook in a pot of boiling water and cook for 2 minutes. Drain immediately and let it cool down.
To a large bowl, add the boiled corn, mayonnaise, red chilli sauce, Italian seasoning, red chilli flakes, and grated cheese. Mix them well.
Butter two slices of bread. Spread the corn mixture over one slice of bread. Add a spoon of grated cheese on top of the filling.
Cover with the second slice of bread and apply butter on the top portion.
Place this on a sandwich maker and cook until the sliced turn golden brown. If you don't have a sandwich maker, cook on a tawa by adding a little bit of butter to the tawa. Toast both sides of the sandwich by gently pressing and flipping it. Make sure both sides turn golden brown.
Once done, cut into triangles and serve with tomato ketchup.
Notes
Adjust spice level to suit your taste. Add more red chilli sauce, red chilli flakes or chopped green chillies for an extra spicy kick.
