Combine Dry Ingredients: In a separate bowl, whisk together the flour (maida), cocoa powder, baking powder, and salt.
Make the Dough: Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Shape the Cookies: Take about 2 tablespoons of dough and flatten it in your palm. Place a piece of chopped dark chocolate in the center and wrap the dough around it, forming a ball.
Arrange on Baking Sheet: Place the cookie balls on the prepared baking sheet, spacing them about 2 inches apart.
Bake: Bake for 16-18 minutes, or until the edges are set but the center is still soft.
Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
