Boiled peanut salad chaat is a savoury and tangy dish that combines the boiled peanuts with a mix of crunchy raw vegetables, fresh herbs, and spices.

Ingredients
  

  • 1 cup Raw peanuts / Groundnuts
  • 1 small Onion finely chopped
  • 1 small Tomato finely chopped
  • 1 small Cucumber finely chopped
  • ¼ cup Raw Mango finely chopped, optional
  • 1 small Green Chilli finely chopped
  • ¼ cup Coriander Leaves / Cilantro finely chopped
  • Salt to taste
  • ¼ teaspoon Pepper Powder
  • 1 teaspoon Chaat Masala
  • 1 teaspoon Cumin Powder
  • Lemon Juice from ½ Lemon

Instructions
 

Cook the raw peanuts

  • First, cook the raw peanuts. If cooking in a stovetop pressure cooker, add the raw peanuts to the pressure cooker, add salt and cover with enough water. Cook for 3 or 4 whistles on a medium flame.
  • If cooking in the Instant Pot, add the raw peanuts, water to cover, and salt. Close the Instant Pot with the lid and pressure cook for 15 minutes. Let the pressure release naturally.
  • The peanuts should be well-cooked but not mushy. Drain any excess water and keep the cooked peanuts ready for the salad.

Prepare the Boiled Peanuts Salad

  • Combine the boiled peanuts, onion, tomatoes, cucumber, raw mango, green chilli in a large mixing bowl.
  • Add the pepper powder, chaat masala, roasted cumin powder, and salt to the bowl.
  • Add finely chopped coriander leaves and squeeze fresh lemon juice over the mixture according to your taste preference.
  • Toss all the ingredients together until well combined.
  • Serve the delicious boiled peanut salad chaat immediately.

Notes

Feel free to add or omit any ingredients based on your taste preferences. You can add carrots, bell peppers, boiled corn, diced mango, or pomegranate seeds for a delicious twist.
Garnish with sev for an extra crunch. The spices and seasonings can also be customized to your taste. For a different taste, you can add coriander mint chutney, tamarind chutney, or red chilli powder.
Adjust the spice level to suit your taste.
