Beetroot pasta sauce is a vibrant and simple dish that combines the earthy sweetness of beets with traditional pasta, and easily available spices, creating a visually stunning meal.
Boil water in a large pot with salt and a spoon of olive oil. Add the pasta and cook according to package instructions or until al dente. It takes anywhere betwen 6-8 minutes.
Check by cutting the pasta with a ladle. If it cuts through easily, then the pasta is done. Switch off and drain the water from the pasta. Keep the cooked pasta aside.
Make the Beetroot Sauce
While the pasta cooks, peel and grate beetroot finely. In a pan, heat 1 tablespoon butter or oil over medium heat and sauté garlic until fragrant.
Add the grated beetroot and saute for a 2 to 3. Add cashews, salt, red chilli powder and let it cook well for 5 minutes.
Add milk and cook for another 5 minutes. Cool it down and blend until you make a fine puree. If you need water to make a fine puree, add accordingly while grinding. Beetroot sauce is ready.
Add 1 tablespoon oil / butter to the same pan. Add the beetroot sauce. Mix well. Add water and salt, as needed. Add mixed herbs, chilli flakes and the cooked pasta. Mix again until the pasta is well coated with the sauce.
Switch off. Finally garnish fresh herbs and serve the delicious beetroot pasta.
Notes
Cashews add a rich texture to the beetroot sauce. If you don't have cashews, you can add blanched almonds.I added red chilli powder fro a slight spice. You can omit or replace it with paprika powder or anything else of your choice. Add some grated cheese while serving for an added flavour.Adjust the spice level to suit your taste.Reserve some pasta water and use it to adjust the sauce’s consistency after mixing.
