Mixed nut chocolate clusters take the indulgence up a notch by incorporating a variety of nuts. It is a medley of almonds, pecans, walnuts, cashews and more, covered in a luscious coat of chocolate.
1 & ½cupsSemi Sweet Chocolatechocolate chips or bar
1 & ½cupsAssorted Nuts
1tablespoonPeanut Butteroptional
Instructions
Add chocolate to a heat-proof mixing bowl. Place the bowl over a vessel of simmering water and melt the chocolate using the double boiler method, stirring in between. Ensure the bottom of the bowl doesn't touch the water.
Alternatively, you can melt the chocolate in the microwave. Stir in between to melt evenly.
Turn off the heat once the chocolate is completely melted.
Add in the peanut butter and combine well with the melted chocolate.
Add the nuts and mix until all nuts are coated well in the chocolate.
Line a baking sheet with parchment paper. Using a spoon, drop small clusters of the chocolate-nut mixture onto the parchment, shaping them into round, bite-sized portions.
Refrigerate the chocolate covered nuts for an hour or until they are set well.
Once the clusters have hardened, carefully peel them off the parchment paper. Arrange them on a festive platter or pack them into gift boxes for a delightful Christmas treat.
Store the mixed nut chocolate clusters in an air-tight container and enjoy the little treats.
Notes
If excess chocolate is melted in the bowl, add more nuts and coat them well. The more chocolate clusters, the better it is to enjoy! Both chocolate chips and a baking chocolate bar can be used in this recipe. Instead of using a mix of nuts, you can use any single nut of your choice.
