Ingredients
  

  • 3 large Bananas ripened
  • 1 & ¼ cup Strawberries diced
  • ¾ cup Sugar
  • ¼ cup Oil
  • ¼ cup Non-Dairy Milk
  • 1 teaspoon Vanilla Extract
  • 1 & ½ cup All Purpose Flour
  • 1 teaspoon Baking powder
  • ½ teaspoon Baking Soda
  • ¼ teaspoon Salt

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
  • Whisk the all-purpose flour, baking powder, baking soda, and salt in a large mixing bowl.
  • In another large bowl, mash the ripe bananas until smooth. Add the granulated sugar, oil, milk, and vanilla extract to the mashed bananas. Mix until well combined.
  • Add the dry ingredients little by little to the bowl of wet ingredients. Stir until just combined. Be careful not to overmix.
  • Gently fold in 1 cup of the chopped strawberries.
  • Pour the batter into the prepared loaf pan and spread it evenly.
  • Top with the rest of the strawberries.
  • Bake for 50-60 minutes or until a toothpick inserted into the center comes clean.
  • Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Notes

Add nuts or vegan chocolate if desired. 
Make this vegan bread with unsweetened almond, soy, or oat milk.
