Vegan strawberry banana bread is a delightful twist on traditional banana bread, incorporating fresh strawberries' sweet and tangy flavour. It's a moist, flavorful, and wholesome treat perfect for breakfast, brunch, or a delightful snack.
Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
Whisk the all-purpose flour, baking powder, baking soda, and salt in a large mixing bowl.
In another large bowl, mash the ripe bananas until smooth. Add the granulated sugar, oil, milk, and vanilla extract to the mashed bananas. Mix until well combined.
Add the dry ingredients little by little to the bowl of wet ingredients. Stir until just combined. Be careful not to overmix.
Gently fold in 1 cup of the chopped strawberries.
Pour the batter into the prepared loaf pan and spread it evenly.
Top with the rest of the strawberries.
Bake for 50-60 minutes or until a toothpick inserted into the center comes clean.
Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.
Enjoy your delicious vegan banana strawberry bread!
