Rava Ladoo ( Rava Laddu )

If you are looking for a simple Indian sweet recipe that can be prepared in minutes, then Rava Ladoo is your best option. This is a quick version which requires no fancy ingredients and no sugar syrup as well.

Ingredients
  

  • 1 cup Rava
  • 3/4 cup Sugar
  • 1/4 cup + 2 tbsp Ghee
  • 3 tbsp Cashew Nuts
  • 1 tsp Cardamom Powder

Instructions
 

  • Add 1 tsp ghee to a pan. Once the ghee melts, add the rava. Roast on low to medium flame till a nice fragrance comes. It takes around 5 to 8 minutes. Keep stirring consistently. Make sure you don't burn the rava. We don't want the colour of the rava to change. Once a nice aroma comes , switch off and let the rava cool.
  • Add granulated sugar, and cardamom powder to a mixie jar and powder it well.
  • Add the roasted rava to the sugar mixture and powder it again.
  • Add the rava sugar mixture to a wide bowl.
  • Add remaining ghee to the pan. Once ghee melts, add broken cashews pieces and fry till cashews turn golden brown.
  • Switch off. Add the cashews along with the ghee to the rava mixture.
  • Mix well with a spatula and ensure that ghee is combined well with rava.
  • Apply little ghee to your palms and shape ladoos once the rava mixture is warm enough to handle.
  • Shape the ladoos while the mixture is slightly hot. It would become difficult to shape them if you let the mixture cool down.
  • Store in an air tight container and enjoy the ladoos.

Notes

If you are unable to shape the ladoos , add a little more melted ghee and try again. Add 1 tbsp melted ghee at a time and try to make ladoos. You can also add some warm milk to bind the ladoos but the shelf life of the ladoos will reduce if milk is added.
These ladoos are comparatively soft and melt in the mouth. As soon as you shape them, the ladoos look extremely soft and may seem like they will crumble. But, as time goes, they do stiffen a bit.
