Who doesn’t love mangoes? Summertime in India doesn’t end without an array of Raw Mango and Mango recipes. Be it Mango pickle, Aam Panna, Raw Mango Gravy, Manga Sambar or Raw Mango Rice, anything and everything with mangoes are my favourites. I am sure it’s the same for many of you.

Variety rice is pretty popular in South India. Variety rice recipes remind me of travel experiences back in India. No trip was complete without packing some delicious Tamarind Rice. Lemon Rice, Tomato Rice, Coconut Rice, Tamarind Rice and many more!
Raw mango rice is one on the list. To give the plain raw mango rice a twist, I have combined it with a lovely cilantro green chilli paste. Slightly tangy, mildly spicy and flavourful, this raw mango cilantro rice is one of my all-time favourites. It is perfect for a quick meal or lunchbox.

Raw Mango Cilantro Rice

While watching a famous Cookery show on TV, one of the participants made this rice. The colour and variation immediately attracted my attention. I tried to create my own version of it and was pretty impressed with the outcome. We just couldn’t stop with one serving.

While there are many ways in which Raw Mango Rice can be prepared, what I am sharing here is an interesting and easy variation that anyone can make and enjoy. Making this on the stovetop is super easy but with an Instant Pot, the process gets simpler. One-Pot Cooking is always a win, isn’t it?

How to make Raw Mango Cilantro Rice

Make a paste of 1 cup cilantro/coriander leaves and 3 green chillies by adding little water. Switch on the Instant Pot and keep it on Saute mode. In the inner pot of the Instant Pot, add oil. Once hot, add mustard seeds, chana dal, red chilli, curry leaves. Once it splutters, add in the coriander chilli paste. Add turmeric powder & salt. Saute for 30 seconds.

Add 1 cup grated raw mango. Saute for a couple of minutes. Add 1 cup washed and drained rice, 2 cups water. Adjust salt if needed. Switch off the Saute mode. Close the Instant Pot with the lid. Pressure cook for 5 minutes. Once done, release the pressure manually after 10 minutes.

Meanwhile, in a pan, add some oil. Once hot, add cashews, peanuts and saute till golden brown. Garnish the rice with these cashews, peanuts. Finally, top the rice with 1/2 cup grated raw mango.

Leave it to rest for a couple of minutes. Fluff up the rice and serve hot.

How to make this rice on the stovetop

First cook the rice in a pressure cooker and keep it ready. I usually cook 1 cup of rice with 2 cups of water and cook for 3 whistles. Once done, transfer the rice to a wide plate. Add 1 tsp oil on top. Gently fluff it up and let the rice cool down. Meanwhile, make a fine paste of coriander leaves and green chillies with little water.

In a pan, add oil. Once hot, add mustard seeds, chana dal, red chilli, curry leaves, peanuts, cashew nuts. Once it splutters, add in the coriander chilli paste. Add turmeric powder & salt. Saute for 30 seconds. Add 1 cup grated raw mango. Saute for a couple of minutes. Switch off.

Now, add the rice to the pan and gently mix. Finally, top the rice with 1/2 cup grated raw mango. Adjust salt if needed. Leave it to rest for a couple of minutes. Fluff up the rice and serve.

Honestly, this rice requires no special side dish. Quick raita or even simple papad is enough. I like serving it with some spicy potato fry, chips or any other roasted vegetable. Tastes amazing!

Ingredients

  • 1 & 1/2 cups Raw Mango Peeled, Grated
  • 1 cup Rice
  • 2 cups Water
  • 1 cup Coriander Leaves
  • 3 Green Chillies
  • Salt as needed
  • 1/4 tsp Turmeric Powder

For Tempering

  • 2 tsp Oil
  • Few Curry leaves
  • 1 tsp Mustard seeds
  • 1 tbsp Chana Dal / Split Bengal Gram
  • 1 tbsp Peanuts / Cashewnuts
  • 1 Red Chilli

Instructions

  • Wash, Peel & Grate Raw Mango. Keep it aisde.
  • Grind coriander leaves & green chillies with just a little water and make a fine paste.

To make this in Instant Pot

  • Switch on the Instant Pot and keep it on Saute mode. In the inner pot of the Instant Pot, add oil. Once hot, add mustard seeds, chana dal, red chilli, curry leaves. Once it splutters, add in the coriander chilli paste. Add turmeric powder & salt. Saute for 30 seconds.
  • Add 1 cup grated raw mango. Saute for a couple of minutes. Add 1 cup washed and drained rice, 2 cups water. Adjust salt if needed. Switch off the Saute mode.
  • Close the Instant Pot with the lid. Close the lid on the pot, and turn the pressure valve to Sealing position. Press the cancel button on Instant Pot. Set the pot to Manual Pressure Cook and set the timer to 5 minutes Once done, release the pressure manually after 10 minutes.
  • Meanwhile, in a pan, add some ghee/ oil. Once hot, add cashews, peanuts and saute till golden brown. Garnish the rice with these cashews, peanuts. Finally, top the rice with 1/2 cup grated raw mango. Leave it to rest for a couple of minutes. Fluff up the rice and serve hot.

To make this in Stovetop

Notes

You can use any rice variety. I have used Sona Masoori / Short Grain rice here. Basmati Rice, Ponni Raw Rice can also be used. 
Serve this rice at room temperature. Tastes best.
You can make this rice using leftover rice too. 
The number of red chillies and green chillies can be adjusted. 
Adjust the quantity of raw mango according to its sourness.
