How to make Corn Spinach Pasta in the Instant Pot?
Set the Instant Pot to SAUTE mode.
When the display shows HOT, add butter or oil. Once melted, add the minced garlic and chopped onions. Sauté for about 2 minutes until fragrant and onions are translucent.
Add the chopped spinach and sweet corn kernels. Stir and cook for another 2-3 minutes.
Add the pasta, salt and water or vegetable broth. Stir everything together to ensure the pasta is submerged in the liquid.
Cancel SAUTE mode, secure the lid, and set the Instant Pot to PRESSURE COOK on high for 4 minutes.
Once the cooking time is complete, quickly release the pressure.
Open the lid and switch to SAUTE mode. Add the fresh cream, grated Parmesan cheese, Italian seasoning, and black pepper powder. Stir well until the cheese melts and the sauce becomes creamy.
If the sauce is too thick, you can add a little more water to reach your desired consistency. Stir and cook for another 1-2 minutes.
